HOMEMADE EASTER TREATS

NEED A FEW MORE EASTER IDEAS THIS YEAR?

Here are a couple of my favorite treats we incorporate in our Easter season celebrations.

MARSHMALLOWS, from Danielle Walker’s Against All Grain Celebrations- pg.316, made with honey, grass fed gelatin, vanilla, and arrowroot powder.

You can buy Easter shaped cookie cutters to cut out Easter themed shapes (healthy, homemade Peeps!) instead of cutting them into squares as seen in the picture above.

Don’t forget to try to find local honey from a trusted neighbor or farm!

AMAZINGLY DELICIOUS CARROT CAKE, from The Heal Your Gut Cookbook- Nutrient Dense Recipes for Intestinal Health Using the GAPS Diet by Hilary Boynton and Mary G. Brackett, foreword by Dr. Natasha Campbell-McBride- pg. 282. This recipe actually doesn’t contain flour of any type. It uses coconut manna, also known a coconut cream, carrots, raisins, cinnamon, shredded carrots, sea salt, baking soda, vanilla extract, honey, and pastured eggs.

I don’t use the frosting recipe, which calls for homemade cultured cream because everyone in my family gets congested from even homemade cultured dairy (with the exception of very hard, dry cheeses).

If you can’t find local pastured eggs from a trusted neighbor or farmer, there is one store bought pastured brand that can be found at most supermarkets. Foraging on the land and grass and hunting for bugs is what chickens were meant to do (not be cooped up and only eat grain). Happy Eggs are what you should look for if you must buy store bought. Look for their yellow compostable carton.
